The curing process
Pastırma is cured meat associated with a seasoned çemen coating. It differs from cooked roast meat or a fresh slice of beef.
Where it appears
Slices may be served directly or added to eggs, beans and savoury pastries. Each recipe changes the balance between the cured meat and other ingredients.
Clarify ingredients
Ask about meat and spice paste when dietary restrictions apply. A food walk should distinguish a small tasting from a complete meal.
